I am a self proclaimed chocolate addict. You give me a piece of cake, and Ill ask for another one before you’re done with your first piece. So from one cake eater to another, I would like to share my secret recipe with you. I have discovered a guilt-free, RAW and healthy alternative that has helped me kick my sugar craving.
I discovered this recipe while eating raw, and prepare it 1-2 times/week. It takes me 4 minutes to mix (not bake), is full of “skinny fats”, and each piece has only 90-100 calories. It is so rich, you only really need one piece. I have it on-hand to share with friends, to have after a work out, and for when my body asks me for sweets (about 4 times/day).
Flourless Chocolate Cake
1 1/2 cup Walnuts Dash of Salt (sea salt is best) 8 pitted Medjool Dates 1/3 cup unsweetened Cocoa Powder 1 tsp Vanilla Extract 2 tsp Water 1/2 cup Fresh Raspberries
Place walnuts and salt in a Food Processor (around $30 at Target if you don’t have one) and process until finely ground. Add the dates, cocoa powder, and vanilla and process until the mixture sticks together. Add water and process briefly.
Transfer onto a plate and form into a 5 inch round cake. Decorate with fresh raspberries. It will keep for 4 days in the refrigerator or for 2 weeks in the freezer. Enjoy!
